Capers pickled in a professional manner

general dry heat of July and August in full bloom plants κάπαρης with these gorgeous, like roses flowers. On roadsides, in the olive groves amid the dry branches and the bushes spread and ολόδροσες capers loaded at the same time with buds, with flowers and with the first cucumbers.
Stare at their beauty in every walk. By the end of August so up and down, with the gherkins to prevail over the buds at the end of the season. Pickles are made and the caper leaves and gherkins and of course the buds. They want their trouble to gather but we have inexpensive a beautiful pickle that adds spice to salads and sauces.
Materials:
caper (buds)
salt, semi-coarse (ριζάτο)
vinegar
olive oil
(the quantities below)
At work:
Wash the buds well because I usually have powder. Put them in a bottle of water 1½ litre, leaving gaps for the last 8-10 inches. Add 2 rounded (not sharp) spoons of salt and fill the bottle with water. We shut it down and leave it in a horizontal position for 15 days (+2 or -2), turning the every day 1-2 rides to dissolve the salt and washed the capers that rises to the top.
The capers will change color and will become λαδοπράσινη. With a knife, tear the bottle (carefully, because it has become a little fermentation and I’ll pop up here and there the buds) and pour the capers in a strainer.
Make a new brine: 1½ cup of water dissolve 1 level tablespoon of salt. Add half a cup of vinegar. Put the buttons of the κάπαρης in clean jars and add the brine solution-vinegar up to 2 inches lower than the point where it reaches the capers. Fill with olive oil and close the jars. In 3-4 days it is ready for consumption.
Comments:
The quantities given relate to the capers contained in a bottle of the 1½-litre. We adapt them accordingly.
If we like more ξυδάτα pickles, reduce the water in the brine and increase the vinegar.
Because the ριζάτο salt does not dissolve quickly, I put it together with the water in the multi and I press 1-2 times on the button. Warming up the water and waiting for it to cool down then completely, in order to use it, it’s a time-consuming process.
The bottles with the capers, put them in a place where we can remember to roll it from time to time. The bench of the kitchen is a joy and a shady spot on the terrace.
